Sweet Potato with Greek yogurt

A perfect balance of carbs and protein! 
Sweet potatoes are an excellent source of Vitamin A - 400% of you daily value.  They also provide Vitamin C, B6, Manganese, Copper, Potassium and Iron, and, when eaten with the skin, they have more fiber than oatmeal.

Using Greek yogurt vs sour cream will add 20 grams of quality protein with ZERO fat!  Cinnamon is included for blood sugar control; Vanilla Creme Stevia extract is added for the perfect flavor.

INGREDIENTS:

·    8oz sweet potato
·    8oz organic Greek yogurt - plain
·    1t ground cinnamon
·    vanilla flavored liquid stevia - 5 drops

INSTRUCTIONS:

ONE. Bake sweet potato in oven at 450 degreees for 50 - 60min
TWO. Add Greek yogurt mixed with Stevia and top with cinnamon
